My weekend breakfast challenge, take two.
This morning I decided to mix it up a little. Luckily for me, the results were tastier than expected. It’s good sometimes to experiment and add more unusual favourites to create something delicious. I absolutely adore coconuts but would never think to use it to make a smoothie. It’s obviously pays off to be brave sometimes…
All you need:
- 4 tbsp of natural or greek yoghurt
- 4 tbsp of coconut cream
- 1 ripe medium mango
- 1cm piece of lemongrass
- juice from 2 apple
Now, put it all together in a blender…
… and it’s all yours! I guarantee, you will want more :-). Bon apetit!
